It’s Not A Diet

GUYS. I need to share with you some awesome news. I am going to take this moment to give myself a quick pat on the back. I have always been the girl who says “I’m on a diet” or “I am back on track on Monday” or “I’m already off the wagon so I will just eat this and start again next week”. Eating healthy was always something that looked good on paper but in reality I just couldn’t get myself together. I love food. I love beer. I love having a good time. And in my mind those three things go hand in hand. And they do in some aspects, but I am finally at a place mentally where I can go for the healthier option and still have a good time.

And with that I have officially lost 12lbs and am feeling better than ever. I still have a ways to go to be where I ultimately want to be, but this is a start and I couldn’t be more proud.

So what am I doing? It’s simple really. Cutting out the carbs, minimizing my potions, eating more fresh produce, staying away from the fast food, eliminating the beer, and lifting weights. It has been a couple weeks now since I have been doing these couple of things and it no longer feels like I am on a diet. I have built this lifestyle that now feels.. normal. I am happy, I do not feel like I am missing out on anything (other than maybe a couple slices of pizza), and I am seeing results.

I am vacationing to Florida on August 9th to go to one of my best friends weddings, and this has been a huge motivator. Who doesn’t want to feel their best while on vacation? I plan on losing another 5-10 by then, and I am taking big strides to reach my goal. That means working out 6 days a week, and cutting out all alcohol. No wine for the next 15 days. I can do it (because I am sure I will have enough of that on vacation to make up for it!)

How To Simplify Your Life

Good Morning Guys! How was your weekend? Mine was a little nuts. Like, getting lost in Boston at midnight by myself with a dead phone nuts. Thankfully the rest of the weekend was not as eventful. But that’s life right? One day you are going full speed and the next you are an auto pilot. So today I am sharing with you a couple tips to help simplify your life, and help make those crazy days a little less.. crazy.

01 Set monthly goals – but just three of them. Decide what you realistically want to accomplish and work towards those goals. You will feel AMAZING when you check them off your list at the end of the month.

02 Declutter. How amazing does it feel to come home after a long day to a clean and organized house? Now trust me, most weeks by Friday my apartment looks a little less organized and a little more like a bomb went off – but what if you spent 20 minutes every day after work organizing one little area? Hang those clothes up instead of just throwing them on the chair (you know you have one of those chairs!), do the dishes, clean up the cats toys that he took out of his basket. Your atmosphere affects your mood, so imagine how much better you would feel after a quick organizing sesh.

03 Unsubscribe from unwanted emails. How much do you hate waking up to 100 emails only to find out 90% of them are from groupon or Nordstrom? Take a day and go through and unsubscribe from all those unwanted emails. Or, you can use a website like unroll.me and they will take care of it for you.

04 Meal Prep. Guys, this has seriously become a lifesaver for me. Not only because I am trying to eat healthier during the week, but because it saves me so much time. My schedule is different all the time and I never know what time I will actually make it home, so pre-portioning and pre-planning my meals is a life saver.

05 Slow down. Seriously guys, I know this is obvious and self explanatory but how many of us actually take some time out of our busy lives to relax and do something for ourselves. Whether it is having a cup of coffee while reading your favorite blogs or listening to your favorite podcasts, re watching the hills for the hundredth time, taking a relaxing bubble bath, or watching the bachelorette with a glass of rose and a bowl of boom chika pop popcorm (tonight!).

Popsicle Cocktail

GUYS – Get ready for a super intricate cocktail recipe post. This is totally going to be a long one so get ready. Are you sitting down? Here is the list of ingredients: Bottle of Sparkling Rose, and a Popsicle.

Open up the bottle, pour yourself a glass, pop a Popsicle in, and enjoy. Obviously I used a bomb pop this weekend because I was feeling extra festive. Seriously sometimes the simplest of things are the most amazing. I am thinking some fresh fruit Popsicle placed in a vodka soda would be killer as well. This weekends drink of choice? I think so.

Tonight I am keeping the good vibes rolling at the Florida Georgia Line concert. Nothing says patriotic like some country jams, good friends, and a Bud Light. Also did I mention they are performing with The Backstreet Boys… AND NELLY. Oh my lord… early 2000’s Casey’s heart is melting. I love me some Nelly and I am not ashamed.

American Pie Recipe

Good Morning Friends and Happy Monday! I am hoping that unlike me you are all at the beach or at the pool continuing on the holiday weekend festivities. I am counting down the hours until I have a dozen $1 oysters and a glass of rosé in my hands.

Today I am sharing with you a dessert recipe perfect for any 4th of July BBQ’s you may be attending tonight or tomorrow. These really is a quick recipe that is sure to make a splash! I am also going to share with you a couple trials and errors I learned along the way because let’s be honest, I am not America’s next top baker.

For the Cherry Filling: 

1 Cup Sugar

2 Cups Pitted Cherries

3 Tablespoons of Cornstarch

1 Tablespoon of Butter

For the Blueberry Filling: 

1 Cup Sugar

3 Cups Blueberries

3 Tablespoons of Cornstarch

1 Tablespoon of Butter

You will also need: 

Pie crust – you can make your own or if you are short on time just pick up a box of pie crust like I did.

1 Egg – for the egg wash

Start by making the blueberry filling. Place the sugar, cornstarch, and blueberries in a small pot. Let the Blueberries sit in the sugar for 10 minutes to release the juices. Then cook the cherries with the sugar, stirring constantly, until the mixture is translucent. Add one tablespoon of butter and set aside. Follow the same directions for the cherry pie mixture.

Grease your pie tin with butter. Lay the first pie crust in the tin, and crimp the edges. Pour the cherry pie mixture towards the bottom of the pie. Then using a rubber spatula pour the blueberry pie mixture in the top of the pie where the stars will be. Next, take the second pie tin and cut out your stars and stripes. Layer the stripes on the pie and place the stars in the top left corner, making it look like a flag.

Place the Pie in the oven at 450 and bake for 40 minutes.

DO NOT forget to place tin foil around the edges of the pie for the first 15 minutes of baking. I forgot in my rush to get the pie done and the edges of my pie burnt. Hence why I only posted a before picture and not an after picture of my beautiful pie. I will just let you imagine it came out beautiful. However, it did taste awesome so 10 points for that right?
